Cauliflower is one of those vegetables I fell in love with later in life. When I was a kid I wouldn't touch it, but then again I had only come across bland, steamed cauliflower. Rich, nutty roasted cauliflower is where it's at! 

KETOGENIC ROASTED CAULIFLOWER WITH PROSCIUTTO AND ALMONDS RECIPE

  • Heat oven to 450 
  • Toss chopped cauliflower in olive oil with ground sea salt and pepper 
  • Pour onto tin foil lined pan
  • Roast in oven for 10 minutes
  • Take out and add the chopped almonds and prosciutto ripped into smaller pieces to the pan 
  • Roast for another 10 minutes or until cauliflower is browned on the edges

Tip: Be careful not to add too much olive oil or the cauliflower won't get as crispy! I've definitely gotten carried away before:)
